  • Spring and Sauvignon Blanc


    Last week we attended the Victorian Agribusiness Summit at the stunning Clyde Park Vineyard and Bistro. We had the opportunity to put together an auction item to raise money for the Victorian Farmers Federation. Talk about the wine community coming together… what amazing people we get to work with! Knowing that a group experience is an awesome prize we rang a few of our industry friends shown including Steven Paul from Oakdene Vineyards, Jon Helmer from Geelong Cellar Door, and Jan and Russell McGlashan from McGlashans Wallington Estate, and together we created an amazing wine tour for 10 people in a Mini Bus (driven by Nadine), that received crazy generous bidding to raise much needed funds for our farmers. Thank you to these awesome humans who didn’t hesitate for a second to say….’I’ll help.’

    What a couple of month it’s been… The launch of the new 2018 Vintage Wines has seen us pour the new BAIE Sauvignon Blanc, Pinot Gris, Rosé and Shiraz at the Winter Shiraz Festival, 360Q in Queenscliff, Barwon Heads Wine Store, Bottles and Barrels, Randalls and more to come – and the feedback has been overwhelming – people were happy to see all their favourites back, with the quality and style they have come to expect.

  • We love ‘love’

    Aaaahhhh – Valentines Day… love it or hate it… you gotta love ‘love’ – and we here at BAIE see a lot of it. Loved up Brides and Grooms, their beautiful families, all coming together to celebrate that day in your life where you really can’t believe you could love another person more. We’ve put together a little flick of some beautiful BAIE moments that make us all love ‘love’ just a little bit more.


    Vintage 2018

    We are all working pretty flat out at the moment in the lead up to what is shaping up to be a wonderful start to the 2018 vintage. Sim has been hard at it over the last few weeks getting the nets on the vineyard (not his favourite job it has to be said) to protect those almost ripe bunches from the birdlife, and preparing to get our hands on those grapes for our winemakers to begin the process of crafting some exciting new wines for you all. The overview of the crop at the minute is that the fruit is ripening well, the health of the vines is excellent and the overall balance in the vineyard is exactly where we want it to be. Can’t wait!

    APCO Wine Walk

    A big thank you to all who attended the Geelong Heritage APCO Wine Walk – a fantastic crowd who raved about our BAIE Sauvignon Blanc and newcomer BAIE Saignée – to get your hands on some of this chilled, juicy, cherry flavoured Rosado style you can jump online here.

    Welcome to the endless possibilities of 2018, we are working overtime in the vineyard to look after those big beautiful bunches that are going to make some pretty spectacular wine this year and we are working hard on finding some pretty innovative ways to thank you for being part of what we do… can’t wait for this year!!

    This quote from Nanea Hoffman (of IG sweatpantsandcoffee fame) has just about summed it up – what will you keep, treasure, ditch and embrace this year?


    Keep the lessons.
    Treasure the love and laughs.
    Ditch the stuff that doesn’t serve you.
    Embrace the adventures yet to come. 


    We don’t know about you… but summer days leaves us feeling a little more adventurous about what we are serving up on the deck or at the beach for the perfect evening with friends. Check out this beautiful recipe that we are literally addicted to this summer… and to complete, serve with a chilled glass of BAIE Pinot Gris (6 or 12packs available here) for dining perfection. Enjoy.



      • 1/4 cup reduced-sodium soy sauce (or tamari for gluten-free)
      • 2 tablespoons honey
      • 1 tablespoon rice vinegar
      • 1 tablespoon Sriracha sauce (or to taste)
      • 1 tablespoon grated fresh ginger
      • 1 tablespoon minced garlic
      • 1 salmon fillet, cut into  200g pieces
      • 1 1/2 teaspoons sesame oil
      • 2 tablespoons finely chopped scallions, for garnish


      1. In a large zip-top plastic bag, combine the soy sauce, honey, vinegar, Sriracha, ginger, and garlic. Add the salmon, toss to coat evenly, and refrigerate for at least 1 hour, or up to 8 hours, turning the fish once.
      2. Remove the salmon from the bag, reserving the marinade. Heat a large sauté pan over medium-high heat and add the sesame oil. Rotate the pan to coat the bottom evenly and add the salmon. Cook until one side of the fish is browned, about 2 minutes. Flip the salmon and cook until the other side browns, 2 more minutes. Reduce the heat to low and pour in the reserved marinade. Cover and cook until the fish is cooked through, 4 to 5 minutes.
      3. Place a piece of salmon on each of 4 serving plates and sprinkle with the scallions.
